BRING THE OUTDOORS IN!

That's right, no camping required to enjoy the taste of a perfectly cooked tin foil dinner. I can hear many women saying "YES!" to themselves right now. Of course, if you like that kind of thing (camping) you can still take these recipes to the great outdoors and have everyone wanting your recipe.

Combine a few key ingredients, fold up, cook, and VOILA you will have created a tasty tin foil dinner. It is really as easy as that. I decided to take my love of developing recipes and combine it with my obsession for tin foil dinners. My first recipe "The Original" is a takeoff from the original tin foil dinner recipe which I am sure you have all made at some point in your life. You cut up a bunch of potatoes, some carrots (which never end up cooking) and then you throw in a couple of meatballs. The end result is, well...dry potatoes, crunchy carrots, and overcooked meat. Oh and then you douse the meal in ketchup. Definitely not my idea of a tasty meal. A few years ago, my husband and I started experimenting with different ingredients to boost the flavor and tenderness of the meats and vegetables. We have come to rely on some staple ingredients

1) Cream of Mushroom/Cream of Chicken soup
2) Cilantro

Okay, okay the cilantro doesn't have to be a part of every meal, but I really do suggest whipping out a can of soup to add that "wow" factor to your tin foil dinner. Keep in mind that you do not have to be out camping to cook these tin foil dinners. These simple dinners can be done in your kitchen (in the oven) or in your backyard (on some coals).

"THE ORIGINAL"
Tin Foil Dinner Recipe

*Recipe makes 4 dinners*

Preheat oven to 375 degrees (at home)
or if cooking outside, start your fire and burn down to coals, making
sure briquets are white and hot

Very important: Get some worcestershire sauce...makes my mouth water just thinking about it!
Here are the main ingredients...so simple right??
2 LARGE POTATOES (thinly sliced)
2 RED PEPPERS (de-seeded and sliced)
1 LARGE ONION (sliced or diced)
1 lb. GROUND TURKEY
1 Tbl. GARLIC
1 Tbl. WORCESTERSHIRE SAUCE
1 can CREAM OF MUSHROOM SOUP
JUICE from 1 LIME
Cilantro (chopped finely)
Salt and Pepper to taste


To prepare, wash and cut all veggies. Next, mix garlic and worcestershire sauce in with ground turkey. Shape turkey into 2" balls or patties. NOTE: Patties will take longer to cook!

Layer a couple tablespoons of mushroom soup on your sheet of tin foil. This prevents BURNAGE and makes the meal oh so tasty. Don't use all the soup! You will add more to the top of your mountain of deliciousness here in a minute.

Potatoes are next. They are the "bed" to the rest of the meat and veggies. Layer accordingly.

Finish off with a squirt of lime and of course, CILANTRO! I promise...cilantro isn't just used in ethnic food. Cilantro and lime can be used to add variety to anything!
Cut off another sheet of tin foil and cover your mountain of deliciousness.

FOLDING INSTRUCTIONS:

Long edges first, roll in the edges toward the middle of the tin foil

Short edges next, making sure to fold it securely. If need a third BIG piece of foil can be wrapped around entire meal.
If cooking at HOME, place tin foil dinners on baking sheet. Place in oven and cook at 375 degrees for 30 minutes (maybe more depending on how big your dinners are). To check if cooked through, fold edges out carefully. Keep dinner away from your face or else, OWW! A not so nice steaming hot facial.


If cooking/camping OUTSIDE, you fire should be burned down to coals, or the briquets to white hot. Place the foil dinner on the coals. If you have enough, place coals on top of pack also. Cooking time will vary depending on your coals, the size of your dinner and the size of the vegetables. Turn over after about 20 minutes. Cook 10-15 minutes more. Remove from coals and carefully open to check to see if it is done. If not done, re-close, wrap another piece of foil around the package if needed and return it to the coals. Check again in 10-15 minutes. When done, open package and eat directly from the foil package, or transfer the food to a plate.
ENJOY your mountain of deliciousness. Add a little cheese to the top for effect and for tastiness!
